EAT ME RECIPE: Hibiscus Snowballs

As sad as it is to admit, the fall is quickly creeping up on us here in Rochester, and soon after that… you know what we’re in for☁️❄️. If you’re a winter person that can’t wait for the first snowfall… or you’re looking to cool down for these last weeks of summer.. Check out this recipe for ice cream snowballs with the bright and clear flavors of Hibiscus dream cream 🌺 

Just roll some scoops of our Hibiscus ice cream in some sweetened coconut flakes and place them in the freezer to firm up, and enjoy! You can even go the extra mile by placing one of these snowballs on a bed of strawberry syrup and savor it together! It’s a sweet pair—perfectly refreshing for a hot summer day!

Ingredients:

  • 1 pint of Hibiscus ice cream from Eat Me Ice Cream

  • 4 cups of sweetened coconut flakes (optional: for more flavor, toast the coconut flakes beforehand!)

Directions:

  • Place shredded coconut in a shallow bowl or tray

  • Using an ice cream scoop, drop a scoop of our Hibiscus ice cream into the coconut flakes and roll the ice cream around to coat and shape into a ball

  • Transfer the snowballs onto a waxed paper-lined baking pan

  • Place in freezer and repeat

  • Freeze for at least 1 hour or until firm
